Green goddess soup with broccoli and peas
For 4 people
  • 1/2 onion
  • 1 broccoli
  • 200g peas (fresh or frozen)
  • 1l vegetable stock
  • pepper
  • onion sprouts
  • roasted pumpkin seeds
  1. Cut the onions into small pieces and fry them in olive oil. Add the chopped broccoli and the peas and deglaze with the stock. Make sure that the vegetables are just covered. You can always add stock later.

  2. Cook for about 15-20 minutes until the broccoli is soft. Then puree with a hand blender. The soup becomes thicker if you pass it through a sieve. 

  3. Season with pepper and then garnish with onion sprouts and roasted pumpkin seeds.
