Beetroot carpaccio
for 2 people
  • 1 beetroot, cooked and peeled
  • goat cream cheese
  • 2 tsp olive oil
  • 1 tsp white balsamic vinegar
  • 1 tsp lemon juice
  • 1 handful of pine nuts and pistachios
  • salt & pepper
  • cress for decorating

Beetroot and goat cheese - what a love affair! In no time you can create a delicious starter or a small main course. 


  1. Cut the beetroot into fine slices with a slicer and arrange on a plate. Top with cream cheese. Chop the nuts finely and sprinkle over them.

  2. For the sauce, mix 2 tsp olive oil, 1 tsp white balsamic vinegar, lemon juice and salt and pepper. Pour the sauce over the beetroot carpaccio and decorate with cress. And become part of the love affair...
