Beetroot carpaccio

1 beetroot, cooked and peeled

goat cream cheese

2 tsp olive oil

1 tsp white balsamic vinegar

1 tsp lemon juice

1 handful of pine nuts and pistachios

Beetroot and goat cheese - what a love affair! In no time you can create a delicious starter or a small main course.

Cut the beetroot into fine slices with a slicer and arrange on a plate. Top with cream cheese. Chop the nuts finely and sprinkle over them.

For the sauce, mix 2 tsp olive oil, 1 tsp white balsamic vinegar, lemon juice and salt and pepper. Pour the sauce over the beetroot carpaccio and decorate with cress. And become part of the love affair...
