Easy veggie dal
For 2 
  • 1/2 tablespoon coconut oil

  • 1 cup red lentils

  • 1 leek

  • approx. 10 cherry tomatoes

  • 2 tbsp yellow curry paste

  • 2.5dl coconut milk

  • 2.5dl water

  • 1/2 teaspoon salt

  • 200g leaf spinach

A super simple dish if you don't really feel like cooking, but still want to do something good for yourself!

 

  1. Chop leek into small pieces and halve cherry tomatoes

  2. Heat the oil in a pan. Add lentils, curry paste and leek, steam for about 3 minutes. 

  3. Deglaze with water and coconut milk, salt and cook for about 15 minutes. Add spinach and simmer for about 5 minutes.
