Juicy honey-glazed oven-baked salmon with veggies

2 salmon fillets (ca 120g)

2 handfuls fresh spinach

1/2 zucchini

100g cherry tomatoes

Salt to season

1 tbsp olive oil

2 slices lemon
Marinade
-
1 spring onion
-
1 clove of garlic
-
1cm ginger, finely chopped

1 tbsp Tamari
-
1 tbsp liquid honey
-
1/2 tablespoon lemon juice

Pepper
-
1 tsp sesame seed

Take two deep plates and put a baking paper on each.

Then spread the spinach and the cut zucchini on the paper, add the halved cherry tomatoes, some salt and drizzle with olive oil.

Place the salmon fillet on the vegetable bed.

For the marinade, cut the spring onions and ginger into small pieces, press the garlic and mix with the honey, tamari, lemon juice and sesame seeds to make a paste. Season with pepper.

Add the marinade to the salmon fillets and spread evenly. Add a slice of lemon to the salmon.

Then close the paper like a small parcel (the easiest way is with a postiche). It should be completely closed.

Cook in the oven at 200° for 20 minutes.
Cut the parcel open and cut off the baking paper so that only the lower part remains. Enjoy!
