Easy cashew-chicken zoodles
For 2 people
  • olive oil
  • 200-250g Chicken, in small cubes
  • 3 small courgettes
  • 50g fresh spinach (or 2 handfuls)
  • 4 tbsp cashew cream
  • 1 tbsp soy sauce / tamari
  • 2 pressed garlic cloves
  • juice of 1 lime
  • salt & pepper
  • Fresh coriander & cashew nuts (roasted as desired)
  1. Heat the olive oil in a large pan and fry the chicken for about 5 minutes, stirring until it is well cooked.

  2. Turn zucchini into zoodles with the spiralizer

  3. Remove the chicken from the pan and set aside.

  4. Mix the cashew cream with the soy sauce, garlic and lime juice and heat lightly until a creamy sauce is obtained. Season to taste with salt and pepper.

  5. Return the zoodles and chicken to the pan and cook for about 3-4 minutes until the zoodles are soft.

  6. Garnish with fresh coriander and cashews.

 

PS: Without chicken and with broccoli it becomes a delicious vegan dish :)
