Creamy blue spirulina-cauliflower soup

1 onion

1 clove of garlic

1 small cauliflower

0.7dl vegetable stock

150ml coconut milk

1 tsp cashew cream

1 tsp spirulina powder

salt & pepper

hemp seeds, pumpkin seeds & edible flowers to decorate
Blue Spirulina powder is 100% natural, even if it doesn't look like that :) It is obtained by cold extraction from the spirulina microalgae. The ingredient phycocyanin is responsible for the blue colouring. It is a very sought-after and valuable natural colouring which is rarely found in nature. It is tasteless and super easy to use. Just try and let the blue magic happen!

Chop the onions into small pieces and fry them in coconut oil with the pressed garlic.

Add the finely chopped cauliflower and the vegetable stock. Cook the soup at medium heat for about 15 minutes or until the cauliflower is soft.

Add coconut milk and cashew cream and season with pepper.

Puree the soup finely, possibly add some vegetable stock if the soup is too thick. Season to taste with salt. Allow the soup to cool a little and then add the spirulina powder and stir well.

Arrange the soup in plates and decorate with hemp seeds, pumpkin seeds and edible flowers.
