Avocado Toast No. 3
For 1 avo-lover
  • 1/2 avocado, sliced
  • 1 slice sourdough or wholemeal bread, toasted
  • 1/2 onion
  • 2 eggs
  • 1 tbsp almond milk
  • thyme
  • salt & pepper

For the scrambled eggs, chop the onion finely and sauté in olive oil. Mix the eggs with the almond milk and add thyme, salt and pepper. Pour the mixture to the pan, reduce the heat and let it falter. Stir from time to time.

Put the avocado slices on the toasted bread and then top with the scrambled eggs. Add some fresh thyme if desired.
